The French Cup of Young Chocolate and Candy Makers in Paris

The third annual French Cup of Young Chocolate and Candy Makers was held in Paris on May 5.
Organized by the French Academy of Chocolate and Candy Making (l'Académie Française du Chocolat et de la Confiserie), the contest involved the creation of an artistic piece and the production of a chocolate bonbon filled with a fruit ganache as well as a soft fruit caramel, using a different fruit than the one used in the ganache. Participants were also required to submit a written statement explaining their reasons for competing and to complete a questionnaire on the chocolate and candy trade.
This year, 25 contestants participated, between the ages of 16 and 22. These deserving young chocolate makers are the future of the profession, and their participation in this contest does honour to the craft.
Maxime Papin, the winner of the "Flavours" prize, was awarded an internship at Valrhona's Ecole du Grand Chocolat.
